Ingredients

  • 3 tablespoons Coco Lopez or Cream of Coconut NOT coconut juice, coconut milk, or coconut cream—see post above for details
  • 1 1/2 tablespoons blood orange juice
  • 1/2 tablespoon fresh lime juice
  • 1 1/2 tablespoons simple syrup
  • 1/2 tablespoon heavy cream or half and half
  • 1 cup ice
  • 1/2 cup club soda

Instructions

  • Mix first 5 ingredients together and pour over ice.
  • Pour the club soda over the ice.
  • Mix and serve immediately.
  • Garnish with whipped cream if desired

Notes

To make simple syrup, add 1/2 cup white sugar to 1/2 cup boiling water. Mix until dissolved, cool to room temperature, then use in any recipe that calls for simple syrup. If the sugar doesn't dissolve, microwave the sugar water for 30-60 seconds.
