- 1 slice sourdough bread toasted
- 1/2 ripe avocado smashed
- 1/3 cup cottage cheese
- 1 tablespoon sunflower nuts and/or roasted pumpkin seeds
- 1/2 teaspoon honey
- 1/8 teaspoon crushed red pepper flakes
- salt and pepper
Assemble the avocado toast by smashing and smearing the avocado onto the toast.
Top with cottage cheese, then sprinkle with nuts/seeds, crushed red pepper flakes, salt and pepper to taste, and a drizzle of honey.
Serve immediately.
- If sourdough bread doesn't fit in your toaster, warm a skillet or grill pan on the stove over medium high heat. Toast for 2-3 minutes on one side, and 1-2 minutes on the other (or until toasted to your liking).
- After cutting the avocado in half lengthwise, take your knife and score the avocado half into cubes. Then, take a fork and start smashing the avocado towards the center of the avocado. The skin serves as a bowl to mash the avocado.
