Preheat air fryer to 400º.
Cut potatoes in half lengthwise. Take each half and cut down the center lengthwise to make two long quarters. Cut each of those again down the center to make a potato wedge (one potato will be cut into 8ths. If your potato is larger, you can cut each quarter into thirds).
Place the potato wedges into a large colander and rinse to remove any additional starch or dirt.
Shake dry, then place in a large bowl.
In a separate small bowl, combine the cornstarch, parsley, onion salt, garlic powder, paprika, and pepper.
Drizzle the potato wedges with oil and toss or mix to cover. Sprinkle with all of the seasoning blend and toss to coat.
Place the potato wedges in the air fryer basket in a single layer, careful not to overcrowd. If your basket is smaller, you may need to do this in two batches.
Air fry for 20-25 minutes, shaking or flipping every ~8 minutes until you reach the desired crispiness. I like to sprinkle a little extra salt on my hot potato wedges before serving.
