Air Fryer Potato Wedges

Ingredients

  • 1.5-2 lb russet potatoes washed and scrubbed
  • 1 tablespoon olive oil or other neutral flavored oil like avocado oil, grapeseed oil, or canola oil
  • 1 tablespoon cornstarch
  • 1 teaspoon dried parsley
  • 1 teaspoon onion salt or seasoned salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked or regular paprika
  • 1/4 teaspoon black pepper

Instructions

  • Preheat air fryer to 400º.
  • Cut potatoes in half lengthwise. Take each half and cut down the center lengthwise to make two long quarters. Cut each of those again down the center to make a potato wedge (one potato will be cut into 8ths. If your potato is larger, you can cut each quarter into thirds).
  • Place the potato wedges into a large colander and rinse to remove any additional starch or dirt.
  • Shake dry, then place in a large bowl.
  • In a separate small bowl, combine the cornstarch, parsley, onion salt, garlic powder, paprika, and pepper.
  • Drizzle the potato wedges with oil and toss or mix to cover. Sprinkle with all of the seasoning blend and toss to coat.
  • Place the potato wedges in the air fryer basket in a single layer, careful not to overcrowd. If your basket is smaller, you may need to do this in two batches.
  • Air fry for 20-25 minutes, shaking or flipping every ~8 minutes until you reach the desired crispiness. I like to sprinkle a little extra salt on my hot potato wedges before serving.

Notes

    • If you prefer unseasoned potato wedges, toss with oil and then sprinkle with salt and pepper. You can then follow the directions as written.
    • I like serving potato wedges and sweet potato fries with "fry sauce," which in Utah is equal parts mayonnaise mixed with ketchup. I also like to add just a touch of bbq sauce to mine for a little smoky fry sauce!
